This course is open to chefs who are currently employed and working in Queensland. Following on from a Certificate III in Commercial Cookery, this program takes chefs on a journey into a more senior supervisory role in the kitchen.
Learn moreThis program is suitable for secondary school students in Years 10, 11 and 12. Running for 30 weeks (one day per week) during term time, the program will provide theory and practical kitchen and culinary skills and knowledge. This program may lead into a possible apprenticeship in Commercial Cookery either as a school based apprentice or after the completion of secondary school. The program is funded by the Queensland Government, no fees are required by the student.
Learn moreThis twelve week part-time course is suitable for people wanting to start their career in hospitality. It is also a great ‘pre-trade’ foundation course for those considering an apprenticeship in commercial cookery.
The course covers basic food preparation and knife skills, food hygiene, workplace health and safety and much more. The practical classes are held within our on-campus state of the art training kitchens. Included in the course is industry placement at one of our partner venues. Many of the students who successfully finish this program are offered employment and apprenticeships at some of Brisbane’s top restaurants and hotels.
